From Simply in Season

8 oz. loose sausage
1 c. chopped onion or scallions
garlic or garlic scapes to taste
4 c. chicken or vegetable broth
1 c. potatoes (diced)
salt and pepper to taste
1 1/2 c. whole milk or evaporated milk or coconut milk
3 c. fresh spinach, kale, bok choy, dandelion, nettles, lambs quarters or any other tender, young greens, wild or tame (chopped)
parsley to taste

Brown sausage in soup pot, remove fat if necessary and add onions and garlic, sauteeing til just tender. Add broth and potatoes and simmer until potatoes are tender, 10-15 minutes. Add greens and milk and simmer until tender. Garnish each bowl with fresh parmesan, if you like. Serves 4
